Take some cassava flour, mix it with grated coconut, and fry it until you get a sort of pancake: this is Tapioca, one of Brazil’s most popular treats. It can be served as a cheese or chicken dish, or it can also be a sweet or dessert when combined with banana or condensed milk. The origins of Tapioca can be found in the indigenous culture of the Pernambuco area. Over the centuries, it has spread to all parts of Brazil, and Rio is no exception!
