Hollandse nieuwe haring
At first it would seem that eating raw herring is not a very appealing proposition. But Dutch-style soused herring (Hollandse nieuwe haring) is processed and seasoned in a very special fashion. The herring is usually caught during springtime and early summer, when the fish have more fat - and taste better!
This is a treat that you must have at least once in your life! The soused herring can be served in many ways, but it usually goes with raw onion and bread. To eat, you must do as the Dutch do. tilt your head upwards, open your mouth, pick up the fish by its tail and swallow it! Of course, there is also the knife and fork option!
