Peking Duck (Beijing Roast Duck)
The Peking Duck or Beijing Roast Duck (běijīng kǎoyā) is one of the most well-known dishes in Chinese cuisine and a symbol of the capital’s gastronomy. This is a special roast duck recipe: thin slices of meat with crispy skin. The traditional chopsticks are used to place the duck slices in wraps. Several other ingredients and seasonings are added, including soy sauce, scallion, cucumber or others depending on the restaurant’s particular recipe.
