It’s a very rare occasion to have a popular dish named after its creator, but that was precisely what happened in the late 19th century to José Luís Gomes de Sá, a professional chef from Porto. It is said the recipe evolved from the ingredients used to make codfish pastries: besides the salted cod itself, potatoes, eggs, onions and olive oil are also used.
